Really Simple Oyster Dressing

As I mentioned in another post for the Spin Cycle about southern style cooking, my holiday menu doesn’t change much from year to year. I love to try new recipes and I’ll usually try one or two new ones during the holidays, but one thing I absolutely MUST have on the table is my oyster dressing.

I think my oldest son would disown me if I didn’t fix it, y’all.

I’ve been making it for so many years that I cannot remember who’s recipe it was to start out with. My mom always made it, so I’m I’m sure she told me how to make it the first time, and I’ve made a few changes to it over the years. So, as near as I can tell, this recipe is pretty much mine.

So I hope y’all try it sometime and like it.

This is a photo from last Christmas. My daughter-in-law, Erin, who was pregnant with baby Freya at the time, was helping herself to  a plate of collard greens, mashed potatoes and green bean casserole. She was just getting to the oyster dressing.

Ginger’s Really Simple Oyster Dressing

Chop one onion and two ribs of celery into very small pieces. Steam in 1/2 stick of butter until soft. Meanwhile, boil 3 cups of broth (I have used turkey, chicken and vegetable – all are good!)

Add to the broth two 8 oz. bags of seasoned bread crumbs ( I use Pepperidge Farm Herb Seasoned but cornbread is good, too) and the onion, celery and butter. Add 2 chopped hard boiled eggs, an 8 oz. can of drained, chopped oysters and a 4 oz. can of sliced mushrooms, also finely chopped.

Stir well, and bake at 350 degrees until slightly browned in a 9 x 13 in pan. You may need to add a little more liquid if it seems dry. I usually end up stirring in about a cup of warm water while I’m mixing it.

This can be made the day ahead of time with canned broth. Just make it up, pop it in the refrigerator and bake just before serving.

This is my youngest son, Klinton, and his pretty girlfriend.  The just celebrated their one year anniversary of when they started going out. I love how they are looking at each other in this picture. They look so happy.

You can tell they love being together. And that makes me so happy.

We took my son and his little family to one of our favorite Wilmington restaurants, called Indochine,  last week for a wonderful meal of Thai food.  The food there is fabulous (and spicey!), the atmoshpere is colorful and cosy, and they have live entertainment! The belly dancer in this picture was quite an interesting diversion. I think this somewhat embarassed  look on my son’s face, as she posed with him, is worth a thousand words.

Thanks to my friend, Jan, over at Jan’s Sushi Bar, I’ve decided to give this here posting every day thing a try, y’all. It’s called NaBloPoMo,and I can’t believe how long it just took me to write that. Stands for “National Blog Posting Month”. You post something every day for a month.

It’s ridiculously hard ….damn near impossible….a monumental task on the weekends..the biggest challenge of my life so far….can we just say only seven days left?…almost over and I have really, really run out of things to say…become the bane of my existence.

Today I was priveldged to go to the OB/GYN specialist with my oldest son and daughter-in-law for an ultra sound of their baby, which is due Jan 2nd. They are having a BOY, y’all! Since I am the mother of three sons, of course little boys hold a special place in my heart. I feel so blessed that I’m going to have grandson.

My middle son and his partner presented me with an adorable granddaughter this past May, and what a thrill it was to finally hold a girl, after years of trying and longing for one.

I think I might be the luckiest woman alive, to have a precious granddaughter and now, a grandson on the way. As I watched the tiny unborn male baby on the screen, I could not suppress the tears of joy. And I thought about his little cousin, Freya, who will surely enjoy having him to tease some day, as only little girls can get way with.

In this picture of her with my mom, her great grandmother Joy Joy, you can see the beginnings of a little mischievous grin. One that is already worth a thousand words.

It’s called NaBloPoMo, and I can’t believe how long it just took me to write that. Stands for “National Blog Posting Month”. You post something every day for a month.

The theme for the month is “Tomorrow.”

Every year in August, my stepdaughter comes to visit. She lives in New York and we get to have for a month. Every year I try to plan something spectacular – a trip better than the one we had the year before. This year we went to Busch Gardens in Williamsburg, Va. I have no idea what I will do next year to top it.

We rode this, y’all. It’s called The Griffin and it’s what is referred to as a “Dive Coaster” because it takes you 210 feet up in the air and then plummets you straight down a 90 degree fall. Fun. That’s me on the far left in the lime green shirt, with my hand in the air.

My step daughter and her friend are sitting next to me, brave 14 year olds that they are. They talked me, an old 51 year old into riding this. I think the expressions on our faces in this next picture are worth a thousand words, don’t y’all?

A Thousand Words Thursday #9

This, y’all,  is my new grand daughter. She is just three weeks old in this picture. She is looking up at my husband, as if to say, “What up, Poppa?”

Or, she could be thinking, “What the heck IS that?”

Or, (my personal favorite) “No wonder Gramma is so crazy about this guy!”

Or, maybe she  instinctively knows that this one tender man has the capacity to become  her safety net.

Whatever she is thinking, it is definitely worth a thousand words.
